Fall Crockpot Ideas

Now that the winter months are approaching, it’s the best time of year to make space for your crockpot to make comforting meals that will warm our bellies. Here are 3 of my favorite crockpot meals that I always make and are always a hit with my friends and family, and even my toddler. Enjoy these easy Fall crockpot recipes and feel free to add or leave out ingredients based on what you like! Happy Crockpot Season!

 

  1. Chicken Noodle Soup

This meal is a must during the cold season as it is a comfort food and so delicious. Filled with veggies, chicken, and spices that you can add to it depending on the flavors you like. 

What you’ll need:

  • Boneless skinless chicken breasts (or chicken thighs)
  • Chopped Onion
  • Chopped Carrots and Celery
  • Salt and Pepper
  • Thyme
  • Season Salt
  • Minced Garlic
  • All Purpose Flour
  • Chicken Stock or Low Sodium Chicken Broth
  • Reame’s Frozen Noodles or Wide Egg Noodles

 

Add the chicken, then the onions, carrots, and celery. Top it with your seasonings and the chicken broth, and cook for 6-8 hours on low or 3-4 hours on high. Towards the end add in your noodles and cook for an additional 30 minutes. Shred your chicken and return it to the crockpot. Stir altogether and enjoy!

 

  1. Potato Soup

This is such a simple yet delicious meal that keeps my family happy and full, and always wanting seconds and thirds. It’s so easy to throw together that you’ll definitely be making this more than once a week!

What you’ll need:

  • Large Russet Potatoes (you can substitute with any kind of potato
  • Onion -diced
  • Chicken Broth
  • Butter
  • Minced Garlic
  • Salt and Pepper
  • Heavy Cream (milk can be used as well)
  • Sour Cream
  • Xanthan Gum or cornstarch

 

First, peel and dice the potatoes and add to crockpot. Add in the diced onions, chicken broth, seasonings, and butter. Cook on low for 4-6 hours or high for 3-4. Stir occasionally making sure the potatoes are tender. Thicken your soup by using cornstarch or flour in the last hour of cooking. Whisk in sour cream and heavy cream to make the soup creamy. Cook on high for 20 minutes until the soup thickens and it’s ready to serve!

 

  1. White Chicken Chili

This one is very filling and super inexpensive to make. This recipe is great for game days or holiday gatherings because it can feed a large crowd and you won’t need to spend a ton of money on it, plus it’s the best comfort meal!

 

What you’ll need:

2 boneless Skinless Chicken Breasts

2 cans of white beans (Do not drain)

1 cup chicken broth\

1/2 onion chopped
1/2 Cup Salsa Verde

2 tsp cumin

1 tsp salt

1 tsp pepper

2 cups Shredded Monterrey Jack Cheese Toppings

Simply add all of the ingredients into the crockpot except for the Monterrey jack cheese. Cover and cook on low for 6-8 hours. Serve topped with the shredded cheese, and enjoy! Yes, it is actually that easy.
